It has to do with applied maths, quant will draw from pretty much anywhere nowadays (I know plenty of biomedical engineering Ph.Ds at Citadel who don't know what Black-Scholes is...),

I don't know where you got that proportion from or where the survey is that Physics actually is proportionally the most of any major (maybe beyond anecdotes from Simons) but there are a lot of them in the field, any applied maths/stats are highly desirable
